Looking for a phone for the sake of phone functionality; everything else is optional

For the time being, price isn't an issue, but I'd like to look at as many options as possible. (By the way, I live in Ontario, Canada)

I don't have a phone as of yet. I'm looking for a cell phone and provider that works well just for the sake of mobile conversation. Personally, I much prefer quality and functionality over convenience and less space used (i.e. a high quality camera, a high quality mp3 player, and a high quality phone over an all-in-one with reduced quality on each function). Any extra features are entirely optional, as long as the phone works well in any situation where one would actually be using a cell phone.
